KK's Super Bowl Go-To Recipes: Grid Iron Grub 

KK's Quesadillas:  Serves 20

Take a flour tortilla, add shredded chedder cheese, salsa and any combination of: sliced chorizo or Mexican sausages, chopped cilantro, onions and sliced jalepenos.  Cover with another tortilla.  Add a tsp. of E.V.O.O., when hot add quesadilla, grill on one side until golden and then flip and warm other side.  Cut with a pizza-cutter into 6 wedges.  Serve with sour cream and guacamole.  Love this recipe as can assemble ahead of time, wrapped in foil and grill just before serving and/or game time!

 

KK's Chicken Fajitas:  Serves 20

Slice 2 large onions and 6 peppers (2 green, 2 red and 2 yellow).  Saute in pan with 2 tsp. of E.V.O.O. until slightly soft or for about 5 mins.  Take out, set aside.  Take 8 lbs. of boneless free-range chicken breasts, fat removed and cut on the diagonal into 1 1/2 inch strips.  Wash under cold water, pat dry and marinate in a glass bowl with 1/3 cup of E.V.O.O., 3 tbs. of chili powder, 3 tbs of cumin, 2 tbs of oregeno, juice of 1 lime, with salt & pepper. Use same pan for chicken, saute on medium/high heat until browned.  Add peppers and onions and mix.  Taste for additional seasonings.  Serve with warm tortillas and sides of salsa, sliced jalepenos and hot sauce.  Again, this recipe can be prepared ahead of time and reheated for game time!

To Warm Tortillas:

Take paper-towels and place one tortilla down on towel, wet your hand with water and run on tortilla, repeat until stack reaches 10.  Fold over tortillas and microwave for 3 mins.  Keep in folded towel to keep warm and put in a basket to serve.  Repeat for additional tortillas. 

KK's Mexican Rice: Serves 20

Combine 4 cups of uncooked rice, 8 cups of water, 4 cubes of chicken buillion, 3 tbs of E.V.O.O. in a pan and bring to a strong boil.  Stir, cover and simmer for 15 mins.  Remove from heat for 5 mins.  Fluff with a fork and add salsa and 1/2 cup of chopped cilantro.
